Punjabi Dal Makhani is a popular Punjabi dish, it is liked by all, it is considered a famous dish of Punjab. Dal makhani is rich in fiber and protein. Many people like to eat Punjabi dal makhani from Dhaba, today we will make Dhaba style Punjabi dal makhani at home. Let us see what ingredients we need to make Punjabi dal makhani.
Soak urad dal and rajma for 6-7 hours
Now wash the soaked dal and rajma thoroughly. Now put the lentils in the cooker, add baking soda and salt to it and add three times water and keep it boiling. After 3 - 4 whistles in the cooker, reduce the flame and let the dal cook on low flame for 10 minutes. Turn off the gas after 10 minutes.
Finely grind tomatoes, ginger, onions, green chillies in the mixer.
Now add ghee in a pan and heat it well. When the ghee gets hot, add cumin, asafoetida and fenugreek. After roasting masala well, add powdered tomato, onion and garlic paste to it. Now add red chili powder, turmeric powder, and coriander powder and stir well. Now roast the masala well. When the ghee starts float on the spices, understand that the masala is roasted.
Now add roasted spices to the lentils. How thin or thick you want the lentils, take water as per your requirement and add it to the lentils. Then boil the lentils on a medium flame for 10 minutes on the gas. Turn off the gas when the dal mixes well
Dal makhani is ready. Now take it out in a bowl. Add green coriander, cream and butter and garnish it. Serve hot dal makhani with parantha, naan and rice.
1.If you want, instead of grinding onion and garlic, you can also chop finely.
2.You can also use whole spices instead of hot spices. The whole spices taste very good in punjabi dal makhni.
